Dandan Mian: Dandan noodles

Dandan Noodles is a famous snack from Chengdu.The noodles are dressed in a rich sauce made from red soy sauce, melted pork lard, sesame oil, and sesame paste.This sauce is further elevated with a medley of ingredients, including mashed garlic, finely chopped chives, fiery red chili oil, a sprinkle of Sichuan peppercorn powder, vinegar, pickled vegetables,and MSG.A generous spoonful of the tender pork sauce, which is the centerpiece of the dish, is added to finish the dish. The key points for preparing Dandan noodles are as follows. Boil noodles with high heat and in a generous amount of water to prevent them from becoming too soft. Pea shoots should be blanched in boiling water until just tender and then promptly transferred into the serving bowl. For this dish, the variety and quantity of seasonings can be adjusted to suit individual tastes.
